Dhokar Dalna
No matter how lavish the wedding night menu is, the taste of home cooking still lingers in the mouth. That home cooking arrangement.
This is an very traditional bengali curry which is named “Dhokar Dalna” – Dhokar means Lentil cakes and Dalna means the gravy
Ingredients
- Chickpeas 1 cup,
- Peas 1 cup,
- Potatoes 2 tow,
- Ginger 10 gm,
- Ginger paste 1 tsp,
- Asafoetida ½ tsp,
- Bay leaves 2 tow,
- Cumin powder 1 tsp,
- Coriander powder 1 tsp,
- Turmeric powder 1 tsp,
- Chilli powder 1 teaspoon,
- hot spice powder ½ teaspoon,
- ghee 1 teaspoon,
- salt, sugar, as per taste,
- oil as per quantity.
How to cook?
Soak two dal. Grind pulses, 1 inch ginger and 2 tsp salt in a mixer. Take down the dal when it is half broken. Heat two spoons of oil in a wok, add whole cumin seeds, asafoetida and stir on low heat and add dal batter.
Add turmeric powder, chilli powder and garam masala powder to it and stir well on low heat for 2 minutes.
When the dal is solidified, put it in an oiled dish. Cut it into square or barfi shape. Brown both sides in a little oil and fry the lids.
Fry the potatoes in that oil. Now boil the cumin seeds and bay leaves. Add ginger paste, turmeric powder, chilli powder, cumin powder, turmeric powder and sour curd to it and mash it well.
Add 2 cups of water if it becomes bitter. When the water boils, add potatoes. Cover and boil the potatoes for 2-3 minutes.
Then leave the fried dhokas. Boil for 1 minute with salt and sugar. Spread ghee and take it down.
