It is a nutritious and easy to make Indian rice dish which is not the usual peas pulao! The star ingredients which differentiates this Indian style corn pulao recipe from other similar pulaos are American sweet corn kernels, basmati rice and Indian spices.
Ingredients :
- Basmati rice (250 gm)
- American corn kernels (80 gm)
- Large Onion (1 piece)
- Ginger garlic paste (1 Teaspoon)
- Olive oil (2 Teaspoon)
- Lime juice (2 Teaspoon)
- Salt (1 Teaspoon)
- Cumin seed (5 gm)
- Green chillies (4 pieces)
- Bay leaf (1 piece)
- Pepper corn (1/2 Teaspoon)
- Flakes of cloves (8 pieces)
- Chopped coriander leaves (3 tablespoon)
- Hot water (2 cup)
- Grated coconut
- Sautéed diced chopped bell pepper.
Process :
- Wash rice and soak them in water for 15-minutes. If possible, soak them for 30 minutes.
- Grind coconut, green chilli, coriander leaves to make a fine paste.
- Add olive oil in a pan and heat.
- Add cumin seeds, cloves, bay leaf, pepper corn, sliced onion, slit green chillies, ginger garlic paste and the above coconut paste.
- Sauté well up to 2 munites, and then add corn kernels.
- Drain the rice and add it to the pan. Keep stirring.
- Add the hot water, salt and cook for at least 15-18 minutes.
- Once the rice is 3/4th done add the lime juice and cook.
- Lastly Garnish with sautéed diced red and yellow bell pepper, grated coconut and chopped coriander leaves and serve hot.
